5 Easy Student Meals You Can Make In Your Dorm

Welcome back to school, there are joys to not living at home, food, unfortunately, is rarely one of them. The days of coming home to cooked meals, sporadic surprise takeaways, and even just having a kitchen to let your culinary freak flag fly was good enough.

Now here you are, in a strange environment, away from home. But does that mean the culinary delights stop? Or do you want to get creative?

1- Microwaveable Mug Oats 

The dishes you can create with a microwave are plenty. We’re sure you’ve scrolled through a few on your Facebook feeds. Well, they’re popular for a reason. Most meals you make take less than 5 minutes to cook. With this recipe, you’re getting a quick, cheap, and healthy meal.

What you’ll need: Banana, peanut butter, honey, milk, oats and raisins.

What you’ll do: mash the banana in the mug, stir in the peanut butter, milk and honey. Add the oats and raisins, still until combined. Microwave for 45 seconds – 1 minute. Enjoy.

2- Burrito bowl 

We’re on a healthy vibe, and no, we’re not trying to trick you. But in between drunken nights out and cheeky McDonald’s, we thought we’d fill the healthy void.

What you’ll need: Brown rice, black beans, salsa, yogurt, avocado, cheese.

What you’ll do: cook the rice (per instructions), combine all ingredients but the avocado in the bowl with the rice, microwave for 45-60 seconds. Top with avocado.

3- Stuffed Sweet Potatoes 

You will not be disappointed (if you make it right). These bad boys are loaded with fantastic flavours.

What you’ll need: sweet potatoes, oil, onion, black beans, corn, tomatoes, cumin, chilli powder, coriander, lime, cheese, yogurt.

What you’ll do: cook the potatoes in the microwave, cook the onion with cumin and chilli powder on the stove, add the beans, corn, tomatoes and cook for 2 minutes. Add the lime juice and coriander. Cut the cooked potatoes in half and stuff with delicious filling.

4- Riceless risotto

Yup, it’s possible and it’s delicious too.

What you’ll need: Cooking oats, veggie broth, peas, cream cheese, rosemary, salt, pepper.

What you’ll do: Mix oats and broth together, microwave them for 2 minutes. Mix in the peas and cream cheese and microwave for another 2 minutes. add salt, pepper and rosemary and serve.

5- Mason Jar Salad

Easiest things to make, and delicious too. These babies are convenient and quick to create.

What you’ll need: lettuce, tomatoes, feta, olives, chickpeas, garlic, honey, salt, Tahini paste, water.

What you’ll do: Mix the Tahini, lemon juice, minced garlic, honey, and salt and pour to the bottom of the mason jar. Cut and layer the vegetables and feta above the dressing. Done. Can be stored in the fridge for up to 3 days.
