Green Smoothie Bowl Recipe

Okay, I’m not gonna lie..  I’m not really a smoothie person, I can appreciate why people do love them, you get lots of goodness in one quick hit, but I like texture, and crunch. So I’ve never been very tempted by the smoothie thing, or even smoothie bowls before… But then..  I was visiting my friend Tor in San Francisco and spotted this healthy looking little take out spot, thinking, in the name of research, I should try something. So we got smoothie bowls for breakfast.. Who knew?! (Well, probably a lot of people, but not me). So good!

Tor had an acai bowl, topped with granola, nuts, seeds, cacao nibs, other yummy things and fruit, while I went for the green smoothie bowl, made with spinach, coconut, mango etc.. Topped again with a range of crunchy, chewy and soft goodies. I was sold! So when I came back I decided this was going to be my new thing. Smoothie bowl every morning. It hasn’t quite happened that way but that’s okay, I like variety too. 😉

What’s good about the green smoothie bowl is you get a hit of veg early on. If I know I’m going to have a crazy day without the chance to eat as many greens as I’d like, then at least I know I started the day with some and feel energised and good from my breakfast!

So here you go, my green smoothie bowl recipe:
Flesh of 1 mango
3 big handfuls washed spinach
½ avocado
2 tsp lucuma powder
150ml coconut water
2 tsp tahini
Juice of  half a lime
1-2 medjool dates
Granola of choice

My quinoa granola would go really nicely:
Toasted pumpkin and sunflower seeds
Toasted coconut flakes
Cocao nibs
Chia seeds
Toasted nuts – pistachio, cashew, almonds, hazelnuts
Sliced seasonal fruits
